Gibson Martini

The Legend of the Gibson Martini

This uniquely American Martini variation speaks directly to the essence of American individualism. But the dry Gibson Martini with a pickled onion disguise is at once a game-changer and an appetizer. Elegant and stylish, yet slightly whimsical and defiant.

Origin (disputed)

The Gibson  is a mixed drink made with gin and vermouth, and often garnished with a pickled onion (although expressly omitted in the original recipe). The oldest published recipe for the Gibson is found in the 1908 book, The World’s Drinks And How To Mix Them by William Boothby.

Gibson martini

Boothby’s recipe of 1908 acknowledges Gibson Girl creator Charles Dana Gibson and the Bohemian Club in San Francisco as the origin of this mix. To be certain, there are several other “colorful” versions of the genesis of the Gibson Martini, but none with the pedigree that is offered here. However, it’s not till late 1930’s that we formally see the introduction of the pickled onion garnish.
